Fish and Chips – our recipe

Fish and chips recipe -Pollack in beer batter

1 Pollack freshly caught - gutted and filleted.
Batter recipe - enough for 4 fillets
8 oz self raising flour
Salt and freshly ground black pepper
12 fluid ounces tesco bitter (or your best choice of ale or lager)
Oil for deep frying
 
Method
  
Heat the oil in a deep pan on to a high heat (do the bread test- dip
a bit of bread in, when it bubbles its hot enough)
1) Place the flour in a bowl
2) Add salt and pepper
3) Slowly mix in the beer until its nice and thick
4) Coat the fish
5) Fry
6) Cook until golden brown
7) Place on kitchen paper to drain off excess oil
8) Serve with chips and mushy peas
9) Don't forget the bread and butter
10) Oh and the tomato sauce and cup of tea, or use up the rest of
that can of beer!

Mix the batter

Coat the fish

Drop the fish into the hot batter

Cooked to perfection
